- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3–4 tablespoons ice water
- 3 cups fresh strawberries, hulled and halved
- 1/3 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 egg
- 1 tablespoon milk
- 1 tablespoon coarse sugar
Instructions
- Mix flour, sugar, and salt in a bowl.
- Rub in cold butter until crumbly.
- Add ice water gradually until dough forms.
- Chill dough for 30 minutes.
- Mix strawberries with sugar, cornstarch, lemon zest, lemon juice, and vanilla.
- Roll dough into a 12-inch circle.
- Place filling in center leaving border.
- Fold edges over fruit.
- Brush crust with egg and milk mixture.
- Sprinkle coarse sugar.
- Bake at 190°C (375°F) for 35–40 minutes.
Notes
Keep butter cold for flaky crust. Allow galette to cool before slicing. Serve warm with vanilla ice cream or whipped cream. Store leftovers refrigerated for up to 3 days.
