Description

This Rustic Apricot Galette is a beautifully simple summer dessert featuring juicy, sun-ripened apricots wrapped in a flaky, buttery crust. Inspired by Mediterranean home baking, this free-form tart is easy to prepare and perfect for sharing with family and friends.   • 1 1/4 cups (160g) all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (115g) cold unsalted butter, cubed
  • 34 tablespoons ice water
  • 500g fresh apricots, pitted and sliced
  • 1/3 cup (65g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Zest of 1 lemon
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional)
  • 2 tablespoons apricot jam (for glaze)

Instructions

  1. In a large bowl, combine flour, sugar, and salt. Add cold butter and rub it into the flour until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together. Form into a disk, wrap, and refrigerate for 30 minutes.
  3. In another bowl, toss sliced apricots with sugar, cornstarch, vanilla extract, cinnamon, and lemon zest. Let sit for 10 minutes.
  4. Preheat the oven to 190°C (375°F). Roll the chilled dough into a 12-inch (30 cm) circle on a lightly floured surface and transfer to a parchment-lined baking sheet.
  5. Spoon the apricot filling into the center, leaving a 2-inch (5 cm) border. Fold the edges over the fruit, pleating as needed.
  6. Brush the crust with beaten egg and sprinkle with coarse sugar.
  7. Bake for 35–40 minutes, or until the crust is golden and the filling is bubbling.
  8. Warm the apricot jam slightly and brush over the fruit for a glossy finish. Allow to cool for 15 minutes before slicing and serving.

Notes

For best results, keep all dough ingredients cold to ensure a flaky crust. If apricots are very sweet, reduce the sugar slightly. Peaches, nectarines, or plums can be substituted when apricots are not in season. Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days. Reheat in a 170°C (340°F) oven for 8–10 minutes before serving.
