- 3 tablespoons olive oil
- 3 cloves garlic, minced

- Fresh parsley for garnish

Instructions
- Preheat oven to 220°C (425°F).
- Slice zucchini evenly.
- Toss with olive oil, garlic, oregano, thyme, salt, and pepper.
- Spread in a single layer on a baking tray.
- Roast for 20–25 minutes until golden and tender.
- Add Parmesan during the last 5 minutes if desired.
- Garnish with parsley and lemon juice before serving.
Notes
Do not overcrowd the baking tray to ensure proper roasting. For extra flavor, add cherry tomatoes or crumble feta cheese over the zucchini before serving. Best enjoyed fresh and warm.
