Description

This Rich Creamy Cheesecake features a buttery biscuit crust and a silky smooth baked cream cheese filling. Perfect for celebrations, holidays, or an indulgent dessert at home.


Ingredients

  • 2 cups crushed digestive biscuits
  • 1/2 cup melted unsalted butter
  • 2 tablespoons sugar
  • 900g full-fat cream cheese
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat oven to 170°C (340°F).
  2. Mix biscuit crumbs, melted butter, and sugar. Press into springform pan.
  3. Bake crust for 10 minutes and cool.
  4. Beat cream cheese until smooth.
  5. Add sugar and mix until creamy.
  6. Add heavy cream and mix gently.
  7. Add eggs one at a time without overmixing.
  8. Stir in vanilla, lemon juice, flour, and salt.
  9. Pour filling into crust.
  10. Wrap pan in foil and bake in water bath for 55–65 minutes.
  11. Cool slowly in oven, then refrigerate at least 4 hours.

Notes

Use room temperature ingredients for smooth texture. Avoid overmixing after adding eggs. Chill overnight for best flavor and texture. Store refrigerated up to 5 days.
