- 2 cups crushed digestive biscuits
- 1/2 cup melted unsalted butter
- 2 tablespoons sugar
- 900g full-fat cream cheese
- 1 cup granulated sugar
- 1 cup heavy cream
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour
- Pinch of salt
Instructions
- Preheat oven to 170°C (340°F).
- Mix biscuit crumbs, melted butter, and sugar. Press into springform pan.
- Bake crust for 10 minutes and cool.
- Beat cream cheese until smooth.
- Add sugar and mix until creamy.
- Add heavy cream and mix gently.
- Add eggs one at a time without overmixing.
- Stir in vanilla, lemon juice, flour, and salt.
- Pour filling into crust.
- Wrap pan in foil and bake in water bath for 55–65 minutes.
- Cool slowly in oven, then refrigerate at least 4 hours.
Notes
Use room temperature ingredients for smooth texture. Avoid overmixing after adding eggs. Chill overnight for best flavor and texture. Store refrigerated up to 5 days.
