Description

This healthy comfort food dinner is perfect for cold evenings when you crave warmth without heaviness. Made with lentils, vegetables, olive oil, and gentle herbs, this nourishing one-pot meal feels cozy, filling, and deeply satisfying for the whole family.


Ingredients

  • 1 cup dried brown lentils
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes (400 g)
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft and lightly golden.
  3. Stir in garlic, carrots, and celery and cook for 5 minutes.
  4. Add lentils, tomatoes, broth, oregano, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 35–40 minutes.
  6. Season with salt, pepper, and lemon juice before serving.

Notes

You can swap lentils for chickpeas or add leafy greens at the end. Store leftovers in the fridge for up to 4 days. Reheat gently on the stove with a splash of water.
