Description

Ingredients

  • 1 medium eggplant, diced
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 ripe tomatoes or 1 can (400g) chopped tomatoes
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Salt diced eggplant and let rest 15 minutes. Rinse and pat dry.
  2. Heat olive oil in a large pan over medium heat.
  3. Sauté onion for 3–4 minutes until soft.
  4. Add garlic and cook for 30 seconds.
  5. Add eggplant and cook 5–6 minutes.
  6. Stir in zucchini and bell peppers; cook 5 minutes.
  7. Add tomatoes, thyme, oregano, salt, and pepper.
  8. Reduce heat and simmer 15–20 minutes.
  9. Finish with fresh basil and drizzle of olive oil before serving.

Notes

Use fresh seasonal vegetables for best flavor. Add chili flakes for spice or crumble feta on top for a Greek twist. Store in the refrigerator up to 4 days or freeze up to 2 months.
