Description

This Quick Cucumber Dill Salad is a fresh, creamy, and refreshing side dish made with crisp cucumbers, tangy yogurt, garlic, and fragrant dill. Perfect for warm days, light meals, or as a healthy accompaniment to grilled dishes.

Ingredients

Scale
  • 3 large cucumbers, thinly sliced
  • 2 tablespoons fresh dill, finely chopped
  • 1/2 small red onion, thinly sliced
  • 3 tablespoons Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar or lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 garlic clove, minced

Instructions

  1. Wash and thinly slice the cucumbers.
  2. Thinly slice the red onion.
  3. In a bowl, mix yogurt, olive oil, vinegar, garlic, salt, and pepper.
  4. Add cucumbers and onion to the bowl.
  5. Toss gently to coat with dressing.
  6. Add fresh dill and mix lightly.
  7. Chill for 10–15 minutes before serving.

Notes

Use fresh dill for best flavor. You can substitute yogurt with sour cream. For extra crunch, add a pinch of salt to cucumbers and let them sit before mixing. Best served fresh but can be stored up to 2 days in the fridge.
