- 3 large cucumbers, thinly sliced
- 2 tablespoons fresh dill, finely chopped
- 1/2 small red onion, thinly sliced
- 3 tablespoons Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon white vinegar or lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 garlic clove, minced
Instructions
- Wash and thinly slice the cucumbers.
- Thinly slice the red onion.
- In a bowl, mix yogurt, olive oil, vinegar, garlic, salt, and pepper.
- Add cucumbers and onion to the bowl.
- Toss gently to coat with dressing.
- Add fresh dill and mix lightly.
- Chill for 10–15 minutes before serving.
Notes
Use fresh dill for best flavor. You can substitute yogurt with sour cream. For extra crunch, add a pinch of salt to cucumbers and let them sit before mixing. Best served fresh but can be stored up to 2 days in the fridge.
