Description

Ingredients

  • 400 g (14 oz) fettuccine pasta
  • 2 large chicken breasts (about 500 g / 1 lb), sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups (360 ml) heavy cream
  • 1 cup (100 g) freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente.
  2. Season the chicken with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat and cook the chicken for 5–7 minutes until golden and cooked through. Remove and set aside.
  4. In the same pan, melt butter and sauté garlic for 30 seconds.
  5. Add heavy cream and simmer for 3–4 minutes until slightly thickened.
  6. Stir in freshly grated Parmesan cheese until smooth.
  7. Add nutmeg, adjust seasoning, and return the chicken to the pan.
  8. Drain pasta, reserving 1/2 cup pasta water.
  9. Toss pasta with the Alfredo sauce, adding reserved pasta water if needed.
  10. Garnish with parsley and serve immediately.

Notes

Use freshly grated Parmesan for the smoothest sauce. Add mushrooms or spinach for variation. Store leftovers in the refrigerator for up to 3 days and reheat gently with a splash of milk or cream to restore creaminess.
