Instructions

Preparing the Prime Rib:

  3. Place the prime rib on a roasting rack in a roasting pan, fat side up. Roast for 15 minutes at 450°F, then reduce the temperature to 325°F (163°C) and continue roasting for an additional 1.5 to 2 hours, or until the internal temperature reaches 120-125°F for medium-rare.

  4. Once cooked, remove the roast from the oven and let it rest for at least 20 minutes before slicing.

Making the Au Jus:

  1. After removing the roast, place the roasting pan over medium heat and add a splash of red wine to deglaze the pan, scraping up any browned bits.

  2. Add the beef broth, Worcestershire sauce, and fresh thyme. Bring to a simmer and cook for 15-20 minutes, reducing the liquid by half.

  3. Stir in butter and adjust seasoning with salt and pepper. Strain the jus if desired for a smooth texture.
