Ingredients
2 racks of baby back ribs
1 cup pomegranate juice
1/2 cup brown sugar
1/4 cup balsamic vinegar
1 tablespoon honey
1 tablespoon soy sauce
3 cloves garlic, minced
2 sprigs rosemary
Fresh pomegranate seeds (for garnish)
Fresh rosemary (for garnish)
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Prepare the Ribs: Preheat your oven to 300°F (150°C). Remove the membrane from the ribs and rub with olive oil, salt, and pepper.
Make the Glaze: In a saucepan, combine pomegranate juice, brown sugar, balsamic vinegar, honey, soy sauce, and minced garlic. Simmer over medium heat until the glaze thickens (about 10-15 minutes).
Bake the Ribs: Place the ribs on a baking sheet lined with parchment paper. Roast in the preheated oven for 2-2.5 hours, or until tender.
Glaze the Ribs: During the last 30 minutes of baking, brush the ribs with the pomegranate glaze every 10 minutes, allowing the glaze to caramelize.
Garnish and Serve: Once the ribs are cooked and glazed, garnish with fresh rosemary sprigs and pomegranate seeds. Serve hot.
Notes
For extra flavor, you can marinate the ribs in the pomegranate glaze overnight before cooking.
You can also grill the ribs for a few minutes after baking to achieve a smoky finish.
The glaze can be made in advance and stored in the fridge for up to a week.
