Ingredients

  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Butter for cooking
  • Maple syrup for serving

Instructions

  1. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl whisk buttermilk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently mix until combined.
  4. Let the batter rest for 5 minutes.
  5. Heat a skillet over medium heat and add a small amount of butter.
  6. Pour 1/4 cup batter into the skillet for each pancake.
  7. Cook until bubbles form on the surface, about 2 minutes.
  8. Flip the pancake and cook another 1–2 minutes until golden brown.
  9. Serve warm with butter and maple syrup.

Notes

Do not overmix the batter to keep pancakes fluffy. If you don’t have buttermilk, mix 2 cups milk with 2 tablespoons lemon juice and let it sit for 5 minutes. Pancakes can be stored in the refrigerator for 3 days or frozen for 2 months.
