Description

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 large chicken breasts, sliced into thin strips
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 250 g (9 oz) fettuccine or linguine
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil and butter in a large deep pot over medium heat.
  2. Add sliced chicken, season with salt, pepper, and oregano, and cook for 5–6 minutes until golden and fully cooked. Remove and set aside.
  3. In the same pot, add minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in chicken broth and heavy cream. Stir and bring to a gentle simmer.
  5. Add uncooked pasta directly into the pot. Let it simmer for 12–15 minutes, stirring occasionally, until tender.
  6. Return cooked chicken to the pot and stir well.
  7. Add grated parmesan and nutmeg. Stir until the cheese melts and the sauce becomes creamy.
  8. Garnish with fresh parsley and serve immediately.

Notes

Use freshly grated parmesan for the smoothest sauce. If the sauce thickens too much, add a splash of warm milk or broth while reheating. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can substitute half-and-half for a lighter version, but the sauce will be less rich.
