- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 500 g ground beef
- 1 red bell pepper, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 2 tablespoons tomato paste
- 1 can crushed tomatoes (14 oz)
- 1 can diced tomatoes (14 oz)
- 1 can kidney beans, drained
- 1 can black beans, drained
- 1 cup beef broth
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, then stir in garlic.
- Add ground beef and cook until browned.
- Stir in bell pepper and spices.
- Add tomato paste and cook for 1 minute.
- Pour in crushed tomatoes, diced tomatoes, beans, broth, and bay leaf.
- Bring to a boil, then reduce heat and simmer 30–40 minutes.
- Remove bay leaf, adjust seasoning, and serve warm.
Notes
For thicker chili, simmer uncovered longer. Add cayenne pepper for more heat. Store leftovers in the refrigerator up to 4 days or freeze for up to 3 months.
