Description

This Lemon Herb Chicken Salad is fresh, vibrant, and full of Mediterranean flavor. Tender grilled chicken is marinated in lemon, garlic, and oregano, then tossed with crisp celery, red onion, and fresh herbs in a light Greek yogurt dressing.   • 2 large boneless, skinless chicken breasts (about 500g)
  • 3 tablespoons extra virgin olive oil
  • Juice of 2 fresh lemons
  • Zest of 1 lemon
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 small red onion, finely diced
  • 1 celery stalk, finely chopped
  • 3 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
  2. Add the chicken breasts and coat well. Marinate for at least 20–30 minutes.
  3. Heat a grill pan or skillet over medium heat and cook chicken for 6–7 minutes per side, until fully cooked (internal temperature 75°C/165°F).
  4. Remove chicken from heat and let it rest for 10 minutes before dicing into small pieces.
  5. In a large bowl, combine diced chicken, red onion, celery, parsley, and dill.
  6. In a separate small bowl, mix Greek yogurt, Dijon mustard, and red wine vinegar until smooth.
  7. Pour dressing over the chicken mixture and stir gently to combine.
  8. Refrigerate for at least 30 minutes before serving to allow flavors to develop.

Notes

For a quicker version, use rotisserie chicken instead of grilling. Store in an airtight container in the refrigerator for up to 3 days. Add cucumber or cherry tomatoes for extra freshness. Serve in pita bread, lettuce wraps, or over mixed greens for a complete Mediterranean-style meal.
