Description

Ingredients

  • 3 large cucumbers, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 3 tablespoons lemon juice

  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon honey
  • 1/4 red onion, thinly sliced

Instructions

  1. Wash and thinly slice the cucumbers.
  2. Sprinkle with salt and let sit for 10 minutes.
  3. In a bowl, whisk lemon juice, olive oil, garlic, pepper, and honey.
  4. Drain excess water from cucumbers.
  5. Add red onion and fresh dill.
  6. Pour dressing over the salad.
  7. Toss gently to combine.
  8. Let rest for 10 minutes before serving.

Notes

Use fresh dill for best flavor. Adjust lemon juice to taste. Store in the fridge up to 2 days. Add feta cheese for a richer variation.
