Ingredients
- 5 cups fresh baby spinach
- 2 cups fresh strawberries, sliced
- 1/2 small red onion, thinly sliced
- 1/3 cup toasted almonds or pecans
- 1/3 cup crumbled feta cheese or goat cheese
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Wash and dry the baby spinach thoroughly.
- Remove strawberry stems and slice the strawberries.
- Thinly slice the red onion.
- Toast the almonds or pecans in a dry skillet for about 3 minutes.
- In a small bowl whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Place spinach, strawberries, onion, and nuts in a large bowl.
- Drizzle the dressing over the salad and toss gently.
- Sprinkle feta cheese on top and serve immediately.
Notes
Use fresh ripe strawberries for the best flavor. Toasting the nuts enhances their taste and crunch. You can replace feta with goat cheese or add grilled chicken to make this salad a full meal. Store leftover dressing in the refrigerator for up to three days.
