Description

A refreshing and creamy homemade cucumber dill salad made with fresh cucumbers, yogurt, garlic, and herbs. Perfect as a light side dish for any meal.


Ingredients

  • 3 large cucumbers, thinly sliced
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon vinegar or lemon juice
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sugar (optional)

Instructions

  1. Wash and thinly slice the cucumbers.
  2. Sprinkle with salt and let sit for 10 minutes.
  3. Drain and gently squeeze out excess water.
  4. In a bowl, mix sour cream, vinegar, olive oil, garlic, salt, pepper, and sugar.
  5. Add chopped dill and stir.
  6. Combine cucumbers with dressing and mix well.
  7. Chill for 20 minutes before serving.

Notes

Use fresh dill for best flavor. You can substitute Greek yogurt for a lighter version. Store in the fridge for up to 2 days. Stir before serving if liquid appears.
