Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Butter for cooking

Instructions

  1. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl whisk buttermilk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  4. Let the batter rest for 5 minutes.
  5. Heat a nonstick skillet over medium heat and lightly butter it.
  6. Pour about 1/4 cup batter onto the pan for each pancake.
  7. Cook until bubbles form on the surface and edges look set.
  8. Flip and cook another 1–2 minutes until golden.
  9. Serve warm with butter, maple syrup, or fresh fruit.

Notes

Do not overmix the batter or pancakes may become dense. Let the batter rest to help create fluffier pancakes. You can add blueberries, chocolate chips, or banana slices for variation. Store leftover pancakes in the refrigerator for up to 3 days or freeze for up to 2 months.
