Ingredients

  • 12 oz (340 g) pasta
  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 8 oz (225 g) mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon dried oregano
  • A pinch of red pepper flakes (optional)
  • Fresh parsley, chopped
  • Zest of 1/2 lemon (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add sliced mushrooms and sauté for 5–6 minutes until golden brown.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add asparagus and cook for 3–4 minutes until tender-crisp.
  6. Pour in heavy cream and simmer gently for 2–3 minutes.
  7. Season with salt, pepper, oregano, and red pepper flakes.
  8. Stir in grated Parmesan cheese until the sauce becomes creamy and smooth.
  9. Reserve 1 cup of pasta water, then drain the pasta and add it to the skillet.
  10. Toss everything together, adding pasta water as needed for a silky sauce.
  11. Finish with lemon zest and fresh parsley, then serve immediately.

Notes

Use fresh asparagus for the best flavor and texture. You can substitute half-and-half for a lighter version or add grilled chicken or shrimp for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of cream or milk.
