- 1 cup fine bulgur wheat
- 1 1/4 cups boiling water
- 2 cups fresh parsley, finely chopped
- 1/4 cup fresh mint, finely chopped
- 3 medium tomatoes, diced
- 3 green onions, sliced
- Juice of 2 lemons
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place bulgur in a bowl and pour boiling water over it. Cover and let sit for 20–25 minutes.
- Fluff bulgur with a fork and allow to cool completely.
- Finely chop parsley and mint.
- Dice tomatoes and slice green onions.
- Combine all ingredients in a large bowl.
- Add lemon juice, olive oil, salt, and pepper.
- Mix gently and let rest for 15 minutes before serving.
Notes
Chop herbs very finely for authentic texture. Adjust lemon juice to taste. Substitute quinoa for a gluten-free option. Store in the refrigerator for up to 3 days and refresh with extra lemon before serving.
