Description

This Healthy Strawberry Spinach Salad is a refreshing, colorful dish made with fresh baby spinach, sweet strawberries, crunchy toasted nuts, creamy feta cheese, and a light balsamic honey dressing. It’s a quick and nutritious salad perfect for lunch, dinner, or as a beautiful side dish for summer gatherings.


Ingredients

  • 5 cups fresh baby spinach
  • 1½ cups fresh strawberries, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup crumbled feta cheese
  • ¼ cup sliced almonds or chopped walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Wash and dry the spinach leaves thoroughly.
  2. Remove stems from strawberries and slice them thinly.
  3. Slice the red onion into very thin strips.
  4. Toast the almonds or walnuts in a dry pan over medium heat for about 2 minutes until fragrant.
  5. In a small bowl whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
  6. Place spinach in a large salad bowl.
  7. Add strawberries, red onion, and toasted nuts.
  8. Drizzle the dressing over the salad and toss gently.
  9. Sprinkle crumbled feta cheese on top and serve immediately.

Notes

For extra protein, add grilled chicken or chickpeas. Goat cheese can replace feta for a creamier flavor. Always add dressing just before serving to keep spinach crisp. Store leftover dressing in a sealed jar in the refrigerator for up to 4 days.
