Ingredients
- 5 cups fresh baby spinach
- 1½ cups fresh strawberries, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup crumbled feta cheese
- ¼ cup sliced almonds or chopped walnuts
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Wash and dry the spinach leaves thoroughly.
- Remove stems from strawberries and slice them thinly.
- Slice the red onion into very thin strips.
- Toast the almonds or walnuts in a dry pan over medium heat for about 2 minutes until fragrant.
- In a small bowl whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
- Place spinach in a large salad bowl.
- Add strawberries, red onion, and toasted nuts.
- Drizzle the dressing over the salad and toss gently.
- Sprinkle crumbled feta cheese on top and serve immediately.
Notes
For extra protein, add grilled chicken or chickpeas. Goat cheese can replace feta for a creamier flavor. Always add dressing just before serving to keep spinach crisp. Store leftover dressing in a sealed jar in the refrigerator for up to 4 days.
