Description

Ingredients

  • 3 large cucumbers, thinly sliced
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon thinly sliced red onion

Instructions

  1. Wash and thinly slice the cucumbers.
  2. Sprinkle with a little salt and let them sit for 10 minutes, then drain excess water.
  3. In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper.
  4. Add fresh dill and stir well.
  5. Combine cucumbers with the dressing and mix gently.
  6. Add red onion if desired.
  7. Chill in the refrigerator for 15–20 minutes before serving.

Notes

Use fresh dill for the best flavor. Drain cucumbers well to avoid excess water. You can substitute Greek yogurt with a dairy-free alternative if needed. Store in the fridge for up to 2 days.
