- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 2 boneless, skinless chicken breasts (1 lb / 500g)
- 8 cups low-sodium chicken broth
- 1 cup water
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 cup whole wheat egg noodles
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
- Juice of 1/2 lemon
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook 5 minutes until softened.
- Add garlic and cook 1 minute.
- Add chicken breasts, broth, water, thyme, oregano, and bay leaf.
- Bring to a boil, then reduce heat and simmer 20–25 minutes.
- Remove chicken, shred with forks, and return to pot.
- Add noodles and cook 8–10 minutes until tender.
- Remove bay leaf. Season with salt and pepper.
- Stir in parsley and lemon juice before serving.
Notes
For best texture, cook noodles separately if storing leftovers. Freeze soup without noodles for up to 3 months. Add spinach or kale for extra nutrition.
