- 500 g ground beef
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 400 g canned diced tomatoes
- 2 tablespoons tomato paste
- 400 g canned kidney beans, drained and rinsed
- 1 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Heat olive oil in a large pot over medium heat and sauté onion until soft.
- Add garlic and cook for 1 minute.
- Add ground beef and cook until browned.
- Stir in bell peppers and cook 3–4 minutes.
- Add tomato paste and spices and cook 2 minutes.
- Pour in diced tomatoes and beef broth.
- Add kidney beans and stir well.
- Simmer uncovered for 30–45 minutes, stirring occasionally.
- Adjust seasoning and serve warm.
Notes
Adjust spice level according to preference. Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months. Chili tastes even better the next day.
