Description

This Gluten-Free Cherry Clafoutis is a soft, custard-style French-inspired dessert made with fresh juicy cherries, creamy milk, and gluten-free flour.   • 2 cups fresh cherries, pitted
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 3/4 cup gluten-free all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon melted butter (plus extra for greasing)
  • 1 pinch salt
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (180°C) and generously butter a 9-inch round baking dish.
  2. Spread the pitted cherries evenly across the bottom of the prepared dish.
  3. In a large bowl, whisk the eggs and sugar until slightly pale and smooth.
  4. Add the milk, heavy cream, vanilla extract, melted butter, and salt. Whisk until fully combined.
  5. Gradually add the gluten-free flour and whisk until the batter becomes smooth and lump-free.
  6. Let the batter rest for 10 minutes to hydrate the gluten-free flour.
  7. Pour the batter gently over the cherries in the baking dish.
  8. Bake for 35–40 minutes, until the top turns golden and the center is just set with a slight jiggle.
  9. Remove from the oven and allow to cool for 15 minutes.
  10. Dust with powdered sugar before serving and enjoy warm or at room temperature.

Notes

For best flavor, use fresh seasonal cherries. If using frozen cherries, thaw and drain thoroughly to avoid excess moisture. Do not overbake; the center should slightly jiggle when removed from the oven. Store leftovers covered in the refrigerator for up to 3 days and reheat gently before serving.
