  • 300 g pasta (spaghetti or fettuccine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, finely chopped
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 200 g mushrooms, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup vegetable broth or reserved pasta water
  • 1/2 cup grated Parmesan cheese
  • Juice of 1/2 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1 cup of pasta water and drain.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add sliced mushrooms and cook for 4–5 minutes until golden and tender.
  4. Stir in asparagus and cook for another 3–4 minutes until crisp-tender.
  5. Season with salt, black pepper, and red pepper flakes.
  6. Pour in vegetable broth or reserved pasta water and let it simmer for 2 minutes.
  7. Add the cooked pasta to the skillet and toss well to coat.
  8. Stir in grated Parmesan cheese and lemon juice until combined.
  9. Garnish with fresh parsley and serve warm.

Notes

For extra flavor, add grilled chicken or shrimp. Substitute Parmesan with vegan cheese for a dairy-free option. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of water or broth.
