Description

This Fresh Strawberry Tart features a buttery homemade crust, silky vanilla custard filling, and beautifully arranged fresh strawberries glazed for shine. It is a simple yet elegant dessert perfect for spring gatherings, summer celebrations, or anytime you want a light and refreshing homemade treat.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon unsalted butter
  • 1 pound (500g) fresh strawberries, hulled and halved
  • 2 tablespoons strawberry jam
  • 1 tablespoon warm water

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a bowl, mix flour, powdered sugar, and salt. Add cold butter and rub until crumbly.
  3. Add egg yolk and cold water. Mix gently until dough forms. Chill for 30 minutes.
  4. Roll out dough and press into a 9-inch tart pan. Prick base with a fork.
  5. Line with parchment and baking weights. Bake 15 minutes. Remove weights and bake 10–12 minutes more until golden. Cool completely.
  6. Heat milk and cream in a saucepan until warm.
  7. Whisk egg yolks, sugar, and cornstarch in a bowl. Slowly add warm milk while whisking.
  8. Return mixture to saucepan and cook over medium heat, stirring constantly, until thickened.
  9. Remove from heat. Stir in vanilla and butter. Cover surface and cool completely.
  10. Spread cooled custard into crust evenly.
  11. Arrange halved strawberries on top in decorative circles.
  12. Mix jam with warm water and brush gently over strawberries for shine.
  13. Refrigerate at least 1 hour before slicing and serving.

Notes

Use ripe, fragrant strawberries for the best flavor. Do not overcook the custard to avoid lumps. You can prepare the crust one day ahead and store at room temperature. Store assembled tart in the refrigerator for up to 3 days. Do not freeze, as the custard texture may change.
