  • 1½ cups fresh strawberries, sliced
  • ½ small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ½ cup toasted pecans or walnuts
  • ¼ cup dried cranberries
  • 3 tablespoons olive oil
  • 1½ tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Wash and dry the baby spinach thoroughly.
  2. Slice the strawberries and thinly slice the red onion.
  3. Toast the pecans or walnuts in a dry pan over medium heat for about 3 minutes.
  4. In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  5. Place spinach, strawberries, onion, nuts, and cranberries in a large bowl.
  6. Sprinkle crumbled feta cheese over the salad.

Notes
