Easy Tabbouleh Salad is a fresh Mediterranean herb salad made with fine bulgur, parsley, mint, tomatoes, lemon juice, and olive oil. Light, vibrant, and naturally vegan, this refreshing dish works perfectly as a healthy side or light meal.

- 1 cup fine bulgur wheat
- 1 ½ cups boiling water
- 2 cups fresh parsley, finely chopped
- ½ cup fresh mint, finely chopped
- 3 medium tomatoes, diced
- 3 green onions, sliced
- Juice of 2 lemons
- 4 tablespoons extra virgin olive oil
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
- Place bulgur in a bowl and pour boiling water over it. Cover and let sit for 15–20 minutes.
- Fluff the softened bulgur with a fork.
- Finely chop parsley and mint. Dice tomatoes and slice green onions.
- Combine bulgur with herbs and vegetables in a large bowl.
- Add lemon juice, olive oil, salt, and pepper.
- Toss well and refrigerate for at least 30 minutes before serving.
Notes
Use fine bulgur for the best texture. Drain excess tomato juice to prevent sogginess. Adjust lemon juice according to taste. Store in the refrigerator for up to 3 days and refresh with a drizzle of olive oil before serving.
