Description
This Easy Strawberry Tart features a buttery homemade crust filled with smooth vanilla pastry cream and topped with fresh, juicy strawberries glazed with apricot jam. It is a simple yet elegant dessert perfect for spring gatherings, family dinners, or afternoon coffee.

- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (115g) unsalted butter, cold and cubed
- 1/4 cup (50g) granulated sugar
- 1 egg yolk
- 2–3 tablespoons cold water
- Pinch of salt
- 1 cup (240ml) whole milk
- 2 egg yolks
- 1/4 cup (50g) sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- 500g fresh strawberries
- 2 tablespoons apricot jam
- 1 tablespoon water
Instructions
- Mix flour, sugar, and salt. Add cold butter and rub until crumbly.
- Add egg yolk and cold water. Form dough and chill for 30 minutes.
- Roll out dough, press into tart pan, prick with fork.
- Bake at 180°C (350°F) for 18-20 minutes until golden. Cool completely.
- Heat milk until warm.
- Whisk egg yolks, sugar, and cornstarch. Slowly add warm milk.
- Return mixture to saucepan and cook until thick.
- Stir in vanilla and butter. Cool fully.
- Spread cream into cooled crust.
- Arrange sliced strawberries on top.
- Heat jam with water and brush over strawberries.
- Chill at least 1 hour before serving.
Notes
Use ripe but firm strawberries for best texture. Allow pastry cream to cool completely before assembling. Store in refrigerator up to 3 days. Prepare crust one day ahead to save time.
