- 5 cups fresh baby spinach
- 2 cups fresh strawberries, sliced
- 1/4 cup red onion, thinly sliced
- 1/3 cup feta cheese, crumbled
- 1/3 cup toasted pecans
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- Pinch of salt
- Pinch of black pepper
Instructions
- Wash and dry the spinach thoroughly.
- Slice the strawberries and thinly slice the red onion.
- Toast the pecans in a dry pan for about 3 minutes until fragrant.
- In a small bowl whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper.
- Place spinach in a large serving bowl.
- Add strawberries, onions, feta cheese, and toasted pecans.
- Drizzle dressing over the salad.
- Toss gently and serve immediately.
Notes
Use ripe strawberries for the best sweetness. Goat cheese can replace feta if desired. Store the dressing separately if making the salad ahead. Add grilled chicken or avocado for a more filling meal.
