- 2 cups fresh or frozen peas (thawed)
- 1/2 cup diced cucumber
- 1/3 cup chopped red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1/4 cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions
- Bring a pot of water to a boil and blanch the peas for 2–3 minutes, then drain and rinse under cold water.
- In a large bowl, combine the peas, cucumber, red onion, feta cheese, and fresh mint.
- In a separate small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and gently mix until everything is well coated.
- Taste and adjust seasoning if needed.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
Notes
Use fresh peas when in season for the best flavor. You can substitute feta with goat cheese for a creamier texture. This salad keeps well in the fridge for up to 2 days. Add toasted nuts for extra crunch if desired.
