- 1 kg waxy potatoes
- 3 large eggs
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 small red onion, finely chopped
- 2 celery stalks, chopped
- 3 small pickles, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley
- 1/2 teaspoon paprika
Instructions
- Boil whole potatoes in salted water until tender. Cool, peel, and cube.
- Boil eggs, peel, and chop.
- Mix mayonnaise, mustard, vinegar, salt, and pepper in a large bowl.
- Add potatoes, eggs, onion, celery, and pickles.
- Fold gently until evenly coated.
- Chill for at least one hour before serving.
Notes
Use waxy potatoes for best texture. Adjust seasoning after chilling. Store in the refrigerator for up to 3 days. Do not freeze.
