This Easy Chicken Noodle Soup is made with tender shredded chicken, fresh vegetables, egg noodles, and aromatic herbs simmered in a comforting homemade broth. Perfect for cold days, busy evenings, or whenever you need a warm bowl of comfort.

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 garlic cloves, minced
- 2 chicken breasts (about 500g)
- 6 cups chicken broth
- 1 cup egg noodles
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- Juice of 1/2 lemon
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery for 5-7 minutes.
- Add garlic and cook briefly.
- Add chicken breasts and chicken broth.
- Season with oregano, thyme, salt, and pepper. Simmer 20-25 minutes.
- Remove chicken, shred it, and return to pot.
- Add egg noodles and cook 8-10 minutes until tender.
- Stir in lemon juice and parsley. Adjust seasoning and serve hot.
Notes
Do not overcook the noodles to avoid mushy texture. Add extra broth when reheating as noodles absorb liquid. For freezing, prepare the soup without noodles and add them fresh when reheating.
