Description

This Easy Asparagus Mushroom Pasta is a light, creamy, and comforting dish made with fresh asparagus, earthy mushrooms, garlic, and Parmesan cheese. Ingredients

  • 300 g pasta (spaghetti, penne, or fettuccine)
  • 1 bunch fresh asparagus, trimmed and cut into pieces
  • 200 g mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream (optional)
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté until golden and tender.
  3. Add the asparagus pieces and cook for 3–4 minutes until bright green and slightly tender.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the heavy cream or a splash of reserved pasta water to create a light sauce.
  6. Add the cooked pasta to the skillet and toss gently to coat with the sauce.
  7. Sprinkle in the Parmesan cheese and mix until the pasta is evenly coated.
  8. Season with salt, black pepper, and red pepper flakes if desired.
  9. Finish with lemon zest and chopped parsley. Serve warm with extra Parmesan cheese.

Notes

For a lighter version, replace the cream with additional pasta water. You can add grilled chicken or shrimp for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of milk or water to maintain creaminess.
