This Easy Apricot Tart is a delightful summer dessert featuring a buttery homemade crust filled with sweet and slightly tangy fresh apricots. Ingredients
- 1 ½ cups (190g) all-purpose flour
- ½ cup (100g) granulated sugar
- ½ cup (115g) unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- Pinch of salt
- 8–10 fresh apricots, halved and pitted
- ¼ cup (50g) granulated sugar
- 2 tablespoons apricot jam
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Powdered sugar, for dusting (optional)
- Sliced almonds, for garnish (optional)
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a 9-inch tart pan.
- In a large bowl, mix the flour, sugar, and salt. Add the cold butter and rub it into the flour mixture until it resembles coarse crumbs.
- Beat the egg with the vanilla extract and add it to the mixture. Mix until a soft dough forms.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface and transfer it to the prepared tart pan. Press gently into the edges and trim excess dough.
- In a bowl, toss the apricot halves with sugar, lemon juice, and lemon zest.
- Arrange the apricots cut-side up over the crust in a circular pattern.
- Bake for 35–40 minutes, or until the crust is golden and the apricots are tender.
- Warm the apricot jam slightly and brush it over the hot apricots to create a glossy glaze.
- Allow the tart to cool slightly before removing from the pan. Dust with powdered sugar and garnish with sliced almonds if desired. Serve warm or at room temperature.
Notes
Use ripe but firm apricots to avoid excess moisture. You can substitute peaches or plums if apricots are not in season. The tart can be made a day in advance and stored in the refrigerator. Reheat gently in the oven before serving for the best texture. Add a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
