  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup olive oil (for frying)
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Place chicken breasts between parchment paper and pound to an even thickness. Season both sides with salt and pepper.
  2. Prepare three bowls: one with flour, one with whisked eggs and milk, and one with breadcrumbs mixed with Parmesan, oregano, basil, garlic powder, salt, and pepper.
  3. Dredge each chicken breast in flour, dip into the egg mixture, then coat thoroughly in the breadcrumb mixture, pressing firmly to adhere.
  4. Let the breaded chicken rest for 10 minutes to help the coating set.
  5. Heat olive oil in a large skillet over medium heat. Fry chicken for 4–5 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
  6. Preheat oven to 400°F (200°C). Spread a thin layer of marinara sauce in a baking dish and place fried chicken on top.
  7. Spoon additional marinara sauce over each piece and sprinkle generously with mozzarella cheese.
  8. Bake for 15–20 minutes until cheese is melted, bubbly, and lightly golden.
  9. Garnish with fresh basil and serve immediately.

Notes

For extra crispiness, use panko breadcrumbs. Add red pepper flakes for a spicy kick. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (180°C) to maintain crisp texture. You can freeze the fried chicken (without sauce) for up to 2 months.
