Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 2 tablespoons milk
- 1 1/2 cups panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 1/2 cup olive oil (for frying)
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions
- Place chicken breasts between parchment paper and pound to an even thickness. Season both sides with salt and pepper.
- Prepare three bowls: one with flour, one with whisked eggs and milk, and one with breadcrumbs mixed with Parmesan, oregano, basil, garlic powder, salt, and pepper.
- Dredge each chicken breast in flour, dip into the egg mixture, then coat thoroughly in the breadcrumb mixture, pressing firmly to adhere.
- Let the breaded chicken rest for 10 minutes to help the coating set.
- Heat olive oil in a large skillet over medium heat. Fry chicken for 4–5 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
- Preheat oven to 400°F (200°C). Spread a thin layer of marinara sauce in a baking dish and place fried chicken on top.
- Spoon additional marinara sauce over each piece and sprinkle generously with mozzarella cheese.
