Ingredients
- 2 cups fresh green peas
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 1/3 cup cucumber, diced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt to taste
- Black pepper to taste
Instructions
- Bring water to a boil and cook peas for 2–3 minutes.
- Transfer peas to ice water to cool and keep them crisp.
- Drain peas and place them in a large bowl.
- Add cucumber, onion, parsley, and mint.
- In a small bowl, whisk olive oil, lemon juice, zest, salt, and pepper.
- Pour dressing over salad and toss gently.
- Add feta cheese and lightly mix before serving.
Notes
Use fresh peas when in season for the best flavor. Frozen peas work well if thawed properly. Add feta just before serving to keep it creamy. You can substitute parsley with dill for a different flavor. Store leftovers in the fridge for up to 2 days.
