Description

This Creamy Strawberry Tart features a buttery golden crust filled with silky vanilla pastry cream and topped with fresh, juicy strawberries glazed to perfection.   • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 2 cups (480ml) whole milk
  • 1/2 cup (100g) granulated sugar (for filling)
  • 3 large egg yolks
  • 3 tablespoons cornstarch
  • 1 tablespoon unsalted butter
  • 1 teaspoon pure vanilla extract
  • 2 cups fresh strawberries, sliced
  • 2 tablespoons strawberry jam
  • 1 tablespoon water

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Rub in the cold butter until the mixture resembles breadcrumbs.
  2. Add egg yolk and cold water. Mix gently until a dough forms. Wrap and chill for 30 minutes.
  3. Preheat oven to 350°F (180°C). Roll out the dough and press into a 9-inch tart pan. Prick the base with a fork.
  4. Bake for 18–20 minutes or until golden. Let cool completely.
  5. Heat milk in a saucepan until warm but not boiling.
  6. In a separate bowl, whisk egg yolks, sugar, and cornstarch. Slowly add warm milk while whisking.
  7. Return mixture to saucepan and cook over medium heat, stirring constantly until thickened.
  8. Remove from heat, stir in butter and vanilla, and allow to cool slightly.
  9. Pour the pastry cream into the cooled tart shell and smooth the top.
  10. Arrange sliced strawberries evenly over the cream.
  11. Warm strawberry jam with water and brush gently over the strawberries for a glossy finish.
  12. Refrigerate for at least 2 hours before slicing and serving.

Notes

For best flavor, use ripe, sweet strawberries. Chill the tart fully before serving for clean slices. You can prepare the crust a day ahead and store it covered at room temperature. Store leftovers in the refrigerator for up to 3 days. Do not freeze, as the cream texture may change.
