This Creamy Chicken Alfredo Pasta is rich, comforting, and full of flavor. Tender golden chicken slices are tossed with perfectly cooked fettuccine and coated in a silky homemade Parmesan cream sauce. Ingredients
- 400 g fettuccine pasta
- 2 large chicken breasts (about 500 g), sliced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 cups (480 ml) heavy cream
- 1 cup (100 g) freshly grated Parmesan cheese
- 1/2 cup (50 g) grated mozzarella cheese (optional)
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to package instructions. Reserve 1/2 cup pasta water, then drain.
- Season the sliced chicken with salt and pepper.
- Heat olive oil in a large skillet over medium heat and cook the chicken for 6–8 minutes until golden and fully cooked. Remove and set aside.
- In the same pan, melt the butter and sauté the minced garlic for about 1 minute until fragrant.
- Pour in the heavy cream and let it gently simmer for 3–4 minutes until slightly thickened.
- Reduce heat and stir in the grated Parmesan cheese until melted and smooth.
- Add mozzarella if using and sprinkle in the nutmeg. Stir well.
- Return the cooked chicken to the skillet and mix into the sauce.
- Add the drained pasta and toss to coat evenly. Add reserved pasta water a little at a time if needed to loosen the sauce.
- Cook together for 2 more minutes, garnish with fresh parsley, and serve immediately.
Notes
For best results, always use freshly grated Parmesan cheese for a smooth sauce. If the sauce becomes too thick, add a splash of warm milk or reserved pasta water. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently over low heat with a little cream or milk to restore creaminess.
