Description

Tender golden chicken slices are tossed with perfectly cooked fettuccine and coated in a silky homemade Parmesan cream sauce.   • 400 g fettuccine pasta
  • 2 large chicken breasts (about 500 g), sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 cups (480 ml) heavy cream
  • 1 cup (100 g) freshly grated Parmesan cheese
  • 1/2 cup (50 g) grated mozzarella cheese (optional)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to package instructions. Reserve 1/2 cup pasta water, then drain.
  2. Season the sliced chicken with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat and cook the chicken for 6–8 minutes until golden and fully cooked. Remove and set aside.
  4. In the same pan, melt the butter and sauté the minced garlic for about 1 minute until fragrant.
  5. Pour in the heavy cream and let it gently simmer for 3–4 minutes until slightly thickened.
  6. Reduce heat and stir in the grated Parmesan cheese until melted and smooth.
  7. Add mozzarella if using and sprinkle in the nutmeg. Stir well.
  8. Return the cooked chicken to the skillet and mix into the sauce.
  9. Add the drained pasta and toss to coat evenly. Add reserved pasta water a little at a time if needed to loosen the sauce.
  10. Cook together for 2 more minutes, garnish with fresh parsley, and serve immediately.

Notes

For best results, always use freshly grated Parmesan cheese for a smooth sauce. If the sauce becomes too thick, add a splash of warm milk or reserved pasta water. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently over low heat with a little cream or milk to restore creaminess.
