Description

Ingredients

  • 2 cups digestive biscuit or graham cracker crumbs
  • 1/2 cup melted unsalted butter
  • 2 tablespoons sugar
  • 900g (2 lbs) full-fat cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream, room temperature
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 325°F (170°C).
  2. Mix biscuit crumbs, melted butter, and sugar. Press into a 9-inch springform pan.
  3. Bake crust for 10 minutes and cool.
  4. Beat cream cheese until smooth. Add sugar and mix gently.
  5. Add sour cream, vanilla, lemon juice, and flour.
  6. Add eggs one at a time, mixing slowly.
  7. Pour filling over crust.
  8. Place pan in water bath and bake 55–70 minutes until center slightly jiggles.
  9. Cool slowly in oven, then refrigerate at least 4 hours or overnight.

Notes

Use room temperature ingredients for smooth texture. Do not overmix after adding eggs. Chill overnight for best flavor. Freeze slices individually if needed.
