- 900g (2 lbs) full-fat cream cheese, room temperature
- 1 cup granulated sugar
- 1 cup sour cream, room temperature
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- 2 tablespoons all-purpose flour
Instructions
- Preheat oven to 325°F (170°C).
- Mix biscuit crumbs, melted butter, and sugar. Press into a 9-inch springform pan.
- Bake crust for 10 minutes and cool.
- Beat cream cheese until smooth. Add sugar and mix gently.
- Add sour cream, vanilla, lemon juice, and flour.
- Add eggs one at a time, mixing slowly.
- Pour filling over crust.
- Place pan in water bath and bake 55–70 minutes until center slightly jiggles.
- Cool slowly in oven, then refrigerate at least 4 hours or overnight.
Notes
Use room temperature ingredients for smooth texture. Do not overmix after adding eggs. Chill overnight for best flavor. Freeze slices individually if needed.
