- 400g macaroni pasta
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan
- 1 teaspoon mustard
- Salt to taste
- Black pepper to taste
- 1/2 teaspoon paprika
Instructions
- Cook macaroni until al dente.
- Drain and set aside.
- Melt butter in a saucepan.
- Add flour and stir to form roux.
- Slowly whisk in milk and cream.
- Cook until thickened.
- Add cheeses and stir until melted.
- Season with salt, pepper, paprika, and mustard.
- Mix pasta with cheese sauce.
- Transfer to baking dish.
- Top with extra cheese.
- Bake at 180°C for 20 minutes.
Notes
Use a mix of cheeses for depth of flavor. Add a splash of milk when reheating to keep it creamy. You can prepare ahead and bake later.
