Ingredients
- 400 g pasta
- 1 bunch asparagus, trimmed and cut
- 250 g mushrooms, sliced
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and black pepper to taste
- 1/2 teaspoon dried thyme or oregano
- Fresh parsley, chopped
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water and drain.
- Heat olive oil in a large pan and sauté asparagus for 3–4 minutes. Remove and set aside.
- Add butter and mushrooms to the pan and cook until golden brown.
- Stir in diced onion and cook until soft, then add garlic and cook for 1 minute.
- Pour in heavy cream and add herbs. Simmer gently for 3–5 minutes.
- Stir in Parmesan cheese until the sauce becomes smooth and creamy.
- Add cooked pasta and asparagus to the sauce, tossing gently. Add reserved pasta water if needed.
- Season with salt and pepper, garnish with fresh parsley, and serve warm.
Notes
Use freshly grated Parmesan for the best flavor. Add grilled chicken or shrimp for extra protein. Store leftovers in an airtight container in the refrigerator for up to three days and reheat gently with a splash of milk or cream.
