Description

This Classic Strawberry Tart combines a buttery homemade crust, silky vanilla pastry cream, and fresh glossy strawberries. It is an elegant yet simple dessert perfect for spring gatherings, celebrations, or afternoon coffee.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup cold unsalted butter, cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 egg yolks
  • 3 tablespoons cornstarch
  • 1 tablespoon unsalted butter
  • 500g fresh strawberries
  • 2 tablespoons apricot jam
  • 1 tablespoon water

Instructions

  1. Mix flour, sugar, and salt. Rub in cold butter.
  2. Add egg and vanilla. Form dough and chill 30 minutes.
  3. Roll dough, press into tart pan, prick with fork.
  4. Bake at 180°C (350°F) for 20 minutes until golden.
  5. Heat milk. Whisk yolks, sugar, cornstarch.
  6. Combine mixtures and cook until thick.
  7. Stir in butter and vanilla. Cool completely.
  8. Spread cream into cooled crust.
  9. Arrange halved strawberries on top.
  10. Brush with warm apricot glaze. Chill before serving.

Notes

Use ripe, fragrant strawberries for best flavor. Chill tart before slicing. Store in refrigerator up to 3 days. Do not freeze.
