This Classic Strawberry Tart combines a buttery homemade crust, silky vanilla pastry cream, and fresh glossy strawberries. It is an elegant yet simple dessert perfect for spring gatherings, celebrations, or afternoon coffee.

- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup cold unsalted butter, cubed
- 1 large egg
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 cups whole milk
- ½ cup granulated sugar
- 4 egg yolks
- 3 tablespoons cornstarch
- 1 tablespoon unsalted butter
- 500g fresh strawberries
- 2 tablespoons apricot jam
- 1 tablespoon water
Instructions
- Mix flour, sugar, and salt. Rub in cold butter.
- Add egg and vanilla. Form dough and chill 30 minutes.
- Roll dough, press into tart pan, prick with fork.
- Bake at 180°C (350°F) for 20 minutes until golden.
- Heat milk. Whisk yolks, sugar, cornstarch.
- Combine mixtures and cook until thick.
- Stir in butter and vanilla. Cool completely.
- Spread cream into cooled crust.
- Arrange halved strawberries on top.
- Brush with warm apricot glaze. Chill before serving.
Notes
Use ripe, fragrant strawberries for best flavor. Chill tart before slicing. Store in refrigerator up to 3 days. Do not freeze.
