Description

This Classic Strawberry Tart features a buttery homemade crust, silky vanilla pastry cream, and fresh glazed strawberries arranged beautifully on top. This elegant yet simple dessert highlights sweet seasonal strawberries and delivers a perfect balance of creamy, fruity, and crisp textures. Ideal for gatherings, afternoon coffee, or special celebrations.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 2 tablespoons cold water
  • Pinch of salt
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 500g fresh strawberries
  • 2 tablespoons strawberry jam
  • 1 tablespoon warm water

Instructions

  1. Mix flour, sugar, and salt. Rub in cold butter until crumbly.
  2. Add egg yolk and water. Form dough and chill 30 minutes.
  3. Roll out dough, press into tart pan, prick with fork, and bake at 350°F (180°C) for 20–25 minutes.
  4. Heat milk until warm.
  5. Whisk egg yolks, sugar, and cornstarch. Slowly add warm milk.
  6. Cook mixture over medium heat until thick. Stir in vanilla and butter. Cool completely.
  7. Spread pastry cream into cooled crust.
  8. Arrange sliced strawberries on top.
  9. Mix jam with warm water and brush over strawberries.
  10. Chill at least 1 hour before serving.

Notes

Use fresh, ripe strawberries for best flavor. Chill crust before baking to prevent shrinking. Prepare crust and cream a day ahead, but assemble the tart on the day of serving for maximum freshness.
