Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter (cold, cubed)
- 1/4 cup granulated sugar
- 1 egg yolk
- 2 tablespoons cold water
- Pinch of salt
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 egg yolks
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
- 500g fresh strawberries
- 2 tablespoons strawberry jam
- 1 tablespoon warm water
Instructions
- Mix flour, sugar, and salt. Rub in cold butter until crumbly.
- Add egg yolk and water. Form dough and chill 30 minutes.
- Roll out dough, press into tart pan, prick with fork, and bake at 350°F (180°C) for 20–25 minutes.
- Heat milk until warm.
- Whisk egg yolks, sugar, and cornstarch. Slowly add warm milk.
- Cook mixture over medium heat until thick. Stir in vanilla and butter. Cool completely.
- Spread pastry cream into cooled crust.
- Arrange sliced strawberries on top.
- Mix jam with warm water and brush over strawberries.
- Chill at least 1 hour before serving.
Notes
Use fresh, ripe strawberries for best flavor. Chill crust before baking to prevent shrinking. Prepare crust and cream a day ahead, but assemble the tart on the day of serving for maximum freshness.
