Description

Classic Chicken Alfredo Pasta is a creamy, comforting Italian-inspired dish made with tender pan-seared chicken, perfectly cooked fettuccine, and a rich homemade Parmesan garlic Alfredo sauce. This easy family dinner comes together in about 35 minutes and delivers restaurant-quality flavor with simple ingredients. Perfect for cozy weeknights, special occasions, or when you crave creamy pasta comfort food.

Ingredients

Scale
  • 400 g fettuccine pasta
  • 2 large chicken breasts (about 500 g), sliced
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup grated mozzarella cheese (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to package instructions. Reserve 1 cup of pasta water, then drain.
  2. Season the chicken slices with salt, pepper, and Italian seasoning on both sides.
  3. Heat olive oil in a large skillet over medium heat. Cook the chicken for 5–6 minutes per side until golden and fully cooked. Remove from the pan and slice into strips.
  4. In the same skillet, melt the butter over medium-low heat. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in the heavy cream and let it simmer gently for about 5 minutes, stirring occasionally.
  6. Add the grated Parmesan and mozzarella cheese. Stir continuously until the cheese melts and the sauce becomes smooth and creamy.
  7. Stir in the nutmeg and adjust seasoning if needed. Add a little reserved pasta water if the sauce becomes too thick.
  8. Add the cooked pasta to the sauce and toss until fully coated. Return the sliced chicken to the skillet and mix gently.
  9. Cook together for 2–3 minutes, garnish with fresh parsley, and serve immediately.

Notes

Use freshly grated Parmesan for the smoothest sauce and best flavor. If the sauce thickens too much, stir in reserved pasta water or a splash of milk. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat with a little cream or milk to restore creaminess. You can substitute shrimp for chicken or add steamed broccoli for extra vegetables.
