Description

These cinnamon rolls, made in a cast iron skillet with yeast, are soft, fluffy, and incredibly gooey. The recipe will guide you through every step—from mixing and kneading the dough to baking the rolls to golden perfection. Topped with a creamy frosting, these rolls will quickly become a favorite for any occasion.

Ingredients

  • For the Dough:

    • 1 cup warm milk (about 110°F)

    • 1/4 cup sugar

    • 2 1/4 tsp active dry yeast

    • 1/2 cup unsalted butter, melted

    • 1 tsp salt

    • 2 large eggs

    • 4 cups all-purpose flour (plus extra for dusting)

  • For the Filling:

    • 1/2 cup unsalted butter, softened

    • 1 cup brown sugar, packed

    • 2 tbsp ground cinnamon

    • 1/4 tsp salt

  • For the Frosting:

    • 1/2 cup cream cheese, softened

    • 1 cup powdered sugar

    • 2 tbsp unsalted butter, softened

    • 1 tsp vanilla extract

    • 12 tbsp milk (for consistency)

Instructions

  1. Activate the Yeast: Combine warm milk, sugar, and yeast in a small bowl. Let it sit for 5-10 minutes until it becomes frothy.

  2. Make the Dough: In a large bowl, combine the melted butter, salt, eggs, and the yeast mixture. Gradually add flour, mixing until the dough pulls away from the sides of the bowl. Knead the dough on a floured surface for 5-7 minutes.

  3. Let the Dough Rise: Place the dough in a greased bowl, cover with a towel, and let it rise for 1-1.5 hours until doubled in size.

  4. Prepare the Filling: Mix brown sugar, cinnamon, and salt in a small bowl. Roll out the dough on a floured surface, spread softened butter over it, and sprinkle the cinnamon-sugar mixture on top.

  5. Roll and Slice the Dough: Roll up the dough tightly and cut into 12-14 even pieces. Place them in a greased 10-inch cast iron skillet, leaving a bit of space between each roll.

  6. Second Rise: Cover the skillet with a towel and let the rolls rise for 30-45 minutes.

  7. Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, until golden brown.

  8. Make the Frosting: Beat together cream cheese, powdered sugar, butter, vanilla extract, and milk until smooth.

  9. Frost the Rolls: Once baked, spread the frosting over the warm rolls and serve.

Notes

  • Ensure the yeast is fresh and the milk is not too hot or too cold to activate it properly.

  • You can prepare the dough the night before and let it rise in the fridge overnight for an even better texture.
