Description

This Chicken Noodle Soup for Dinner is warm, comforting, and made with tender chicken, fresh vegetables, egg noodles, and a rich homemade broth. Perfect for cozy evenings and family meals.


Ingredients

  • 1 whole chicken (1.5 kg)
  • 10 cups water
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups egg noodles
  • Juice of half a lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place chicken and water in large pot and bring to gentle boil.
  2. Skim foam and simmer 40 minutes.
  3. Remove chicken and shred meat.
  4. Sauté onion, carrots, and celery in olive oil.
  5. Add garlic and cook briefly.
  6. Add vegetables and herbs to broth and simmer 15 minutes.
  7. Add egg noodles and cook until tender.
  8. Return shredded chicken to pot.
  9. Add lemon juice and parsley before serving.

Notes

Use bone-in chicken for deeper flavor. Add lemon at the end for brightness. Store up to 4 days in refrigerator. Freeze without noodles for best texture.
