- 1 whole chicken (1.5 kg)
- 10 cups water
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups egg noodles
- Juice of half a lemon
- 2 tablespoons fresh parsley, chopped
Instructions
- Place chicken and water in large pot and bring to gentle boil.
- Skim foam and simmer 40 minutes.
- Remove chicken and shred meat.
- Sauté onion, carrots, and celery in olive oil.
- Add garlic and cook briefly.
- Add vegetables and herbs to broth and simmer 15 minutes.
- Add egg noodles and cook until tender.
- Return shredded chicken to pot.
- Add lemon juice and parsley before serving.
Notes
Use bone-in chicken for deeper flavor. Add lemon at the end for brightness. Store up to 4 days in refrigerator. Freeze without noodles for best texture.
