  • 400 g (14 oz) fettuccine pasta
  • 2 large chicken breasts (about 500 g / 1 lb)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 2 tablespoons chopped fresh parsley
  • Extra Parmesan cheese for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain.
  2. Season both sides of the chicken breasts with salt, pepper, and oregano.
  3. Heat olive oil in a large skillet over medium heat. Cook the chicken for 6–7 minutes per side until golden brown and fully cooked. Remove and let rest for 5 minutes, then slice into strips.
  4. In the same skillet, reduce heat to low and add butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in the heavy cream and let it gently simmer for 3–5 minutes, stirring occasionally.
  6. Add the grated Parmesan cheese gradually, stirring continuously until the sauce thickens and becomes smooth.
  7. If needed, add reserved pasta water a little at a time to loosen the sauce to your desired consistency.
  8. Add the cooked fettuccine to the sauce and toss until fully coated.
  9. Top with sliced chicken and garnish with fresh parsley and extra Parmesan before serving.

Notes

For best results, always use freshly grated Parmesan cheese as it melts smoother than pre-shredded varieties. Do not boil the sauce to prevent separation. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of milk or cream to restore the creamy texture. You can substitute shrimp for chicken for a delicious variation.
