Ingredients
- 400 g (14 oz) fettuccine pasta
- 2 large chicken breasts (about 500 g / 1 lb)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 cup reserved pasta water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 2 tablespoons chopped fresh parsley
- Extra Parmesan cheese for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain.
- Season both sides of the chicken breasts with salt, pepper, and oregano.
- Heat olive oil in a large skillet over medium heat. Cook the chicken for 6–7 minutes per side until golden brown and fully cooked. Remove and let rest for 5 minutes, then slice into strips.
- In the same skillet, reduce heat to low and add butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in the heavy cream and let it gently simmer for 3–5 minutes, stirring occasionally.
- Add the grated Parmesan cheese gradually, stirring continuously until the sauce thickens and becomes smooth.
- If needed, add reserved pasta water a little at a time to loosen the sauce to your desired consistency.
- Add the cooked fettuccine to the sauce and toss until fully coated.
- Top with sliced chicken and garnish with fresh parsley and extra Parmesan before serving.
Notes
For best results, always use freshly grated Parmesan cheese as it melts smoother than pre-shredded varieties. Do not boil the sauce to prevent separation. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of milk or cream to restore the creamy texture. You can substitute shrimp for chicken for a delicious variation.
