  • 500 g fresh cherries, pitted
  • 3 large eggs
  • 100 g granulated sugar
  • 1 tablespoon pure vanilla extract (or seeds of 1 vanilla bean)
  • 120 ml whole milk
  • 120 ml heavy cream
  • 100 g all-purpose flour
  • 30 g unsalted butter, melted (plus extra for greasing)
  • 1 pinch salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 180°C (350°F) and generously butter a 24 cm round baking dish.
  2. Spread the pitted cherries evenly across the bottom of the prepared dish.
  3. In a large mixing bowl, whisk the eggs and sugar until light and slightly frothy.
  4. Add vanilla extract and salt, mixing gently.
  5. Pour in the milk and heavy cream, whisking until combined.
  6. Sift in the flour and whisk until the batter becomes smooth and lump-free.
  7. Stir in the melted butter and mix well.
  8. Let the batter rest for 10 minutes to improve texture.
  9. Carefully pour the batter over the cherries in the baking dish.
  10. Bake for 35–40 minutes until the top turns golden and the center is just set with a slight jiggle.
  11. Allow to cool slightly before dusting with powdered sugar.
  12. Slice and serve warm or at room temperature.

Notes

Use ripe, sweet cherries for the best flavor. You can substitute raspberries, blackberries, or sliced apricots if desired. For a deeper vanilla flavor, use a whole vanilla bean. Serve slightly warm for the best custardy texture. Store leftovers covered in the refrigerator for up to 3 days and reheat gently before serving.
